All tea starts as green tea. Sencha green tea is steamed to stop the fermentation process compared to oolong tea (semi-fermented) and black tea (fully fermented) which are pan fired to stop the fermentation process. Both green and black tea contain antioxidants and polyphenols that help neutralize harmful free radicals thought to contribute to the development of certain health conditions as well as the aging process.
